MOLECULE

(E,E)-2,4-decadienal

A molecule is one chemical compound. SmellBook lists (E,E)-2,4-decadienal because a VERIFIED claim names it in the evidence for 1 Atlas entry: Popcorn.

What it is

These identifiers pin down exactly which compound is meant, so the same molecule can be found in other databases. They say nothing about how it smells.

Where research reports it

Each report below is a VERIFIED claim, quoted with its scope and the source it rests on. The role says what the claim states about the molecule, in the claim’s own words.

Popcorn

Key odorant · the claim says “the four with the highest flavour dilution factors”

The claim names it among the molecules that matter most for the smell of what was studied.

In freshly prepared popcorn, aroma extract dilution analysis detected 23 odorants; the four with the highest flavour dilution factors were 2-acetyl-1-pyrroline (roasty, popcorn-like), (E,E)-2,4-decadienal (fatty), 2-furfurylthiol (coffee-like) and 4-vinyl-2-methoxyphenol (spicy).

Scope: Freshly prepared popcorn in one 1991 study; dilution factors rank odour potency in an extract, not amounts.

What this page does not claim

WHAT THIS MEANS

SmellBook lists a molecule only where a VERIFIED claim names it, in the role and scope that claim states. A molecule reported in a smell's evidence is not the whole smell: most smells come from many compounds together, and the studies measured particular samples, such as one cultivar, an essential oil or a cooked product.
