Thirty-seven aroma-active compounds were found in non-centrifugal brown cane sugar, mainly ketones, pyrazines, alkanes, phenols and alcohols, giving caramel, sweet and fruity notes.

Non-centrifugal cane sugar, which differs from refined sugar with molasses added back.
